No Bake Chocolate Cheesecake

This is a recipe from food.com for a Hershey's no bake chocolate cheesecake that I love.
 
1 1/2 cups Hershey's semi-sweet chocolate chips
1 (8 ounce) package cream cheese, softened
1 (3 ounce) package cream cheese, softened
1/2 cup sugar
1/4 cup butter or 1/4 cup margarine, softened
2 cups frozen non-dairy topping, thawed
1 (6 ounce) package of oreo cookie crumb crust
 
Place chocolate chips in small microwave-safe bowl. Microwave at HIGH (100%) 1 minute; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred. Set aside to cool.

Beat cream cheese, sugar and butter in large bowl on medium speed of mixer until creamy. Gradually add melted chips, beating on low speed until blended. Fold in whipped topping until blended; spoon into crust.

Refrigerate until firm. Garnish as desired. Cover; refrigerate leftover cheesecake.
 
 
I like to double the recipe and make two and keep one in the freezer for later use....just know it must be set out for around an hour after frozen in order to be eaten.   
 
 
 
 
 
 





Spinach and Mozzarella Pasta


 First start by cutting up your chicken into small pieces and then dip them into bread crumbs and spread over a greased baking sheet place in oven and bake at 350 for 20 min

 In a big bowl mix cooked bow tie pasta, washed and ready baby spinach leaves, small grape tomatoes cut in halves, two cups of mozzarella cheese and one jar of spaghetti sauce(this can be done without the sauce by using some of the water that the pasta was boiled in to keep it from getting too dry)

 Once chicken is baked then add it into the bowl and mix it all together and place it in a large baking pan
 Cover it with more mozzarella cheese and place in oven covered for 20 min:
 Allow to cool then serve:


Kidney Beans in a Crock Pot

Here is a easy dinner recipe where you can just throw everything in the crock pot and have dinner ready when you get home from a long day of work.


What you will need:
1 bag of  Kidney beans(soaked over night)
1 kielbasa flavor of your choice
1/2 of a large onion
1 Tbs of garlic
garlic powder
onion powder
basil leaves
Italian seasoning

First you will take the pre-soaked beans and lay them out in the crock pot and season as you desire, I do not measure the seasonings I just kind of go all for it.

Next I add the garlic, kielbasa and onion:






Then add 6 cups of water place crock pot on low and cook for 8 hours
I love the way this dish turns out.  I personally will add Tony's Zatterans seasoning in my own bowl to give it a little kick.  My husband who is not a fan of beans will eat this.

Chicken Cor Don Blue

 Preheat oven to 400

 What you will need:

 Boneless  skinless  chicken breast( thick cut)
 Sliced Provolone  Cheese
 Ready made  bacon
 Deli  sliced Ham
  Italian  Style Bread Crumbs
 Garlic  powder
 Onion  powder

 Butterfly  each of the chicken breasts  making sure not to completely cut them in half:



NEXT  layer on one half provolone  cheese,  ham  and  bacon,  then sprinkle  with  seasonings then  top  with  another slice of cheese:




Next  roll up chicken and anchor it closed with toothpics:






Next  roll in bread crumbs and place in well greased  pan:

Bake  covered  with foil  for 30  min then  uncover  bake  additional 5  minutes  then  Turn oven to broil and  broil just for 3  min( this is only if you like a little crunch)



And serve:



This turned out amazing but my next meal I will make a home made  Alfredo sauce to go on top.
