So I apologize again, I lost the pictures for this as well so I was able to take a picture of the left overs in the fridge, doesn't look at nice as fresh made but still really tastes just as good :-)
What you need:
2 pounds of lean ground beef or ground turkey
2 packets of taco seasoning
1 large can of enchilada sauce(I like mild)
1 Tomato diced
1/4 of a large onion diced
1 16oz bag of shredded mexican cheese
1 cup of water
1 8 count pack of flour burrito size tortillas
1 Can of re-fried beans
In large skillet brown ground turkey or beef then add in your taco seasoning with 1 cup of water. Next add in your tomato and onion and allow to simmer for a few minutes. Get a large deep baking pan and pour a tiny bit of enchilada sauce into the bottom and then spread some ground beef mixture into the bottom. Top this with cheese then spread your tortillas to cover the meat and top this with re-fried beans(it may be easier to spread the beans onto the tortillas first before you place into the pan then repeat until the pan is full, then take the rest of your enchilada sauce and pour over entire dish top with cheese. You will cover this with foil but you may want to take a few tooth picks or something to keep the cheese from melting to aluminum foil then bake in the oven at 350 for 30 min.

Peanut Butter Fudge
Super easy, definitely so bad for you but so delicious all at the same time!
What you need is:
1 pound of powdered sugar
3/4 cup of melted butter
1 and a 1/2 cup of peanut butter
Play around with these measurements I've noticed depending on the kind of powdered sugar you use sometimes it takes more, the consistency you want to end up with is so thick like a bread dough consistancy where it isn't going to stick to your hand at all when you touch it. Spread and press this into a large brownie or glass pan as smooth as possible.
For topping then melt 1 cup of milk chocolate chips with 1/4 cup of peanut butter in the microwave just for about 30-45 seconds then stir together until smooth then pour over fudge and spread it smooth, place in fridge until cooled and set. Then cut and enjoy!

Thai Peanut Chicken
So this is a recipe I found in a magazine that I tweaked a little. It turned out really good.

4 Boneless skinless chicken breasts
3/4 cup of unsweetened coconut milk
1/2 cup of peanut butter
1/2 tsp of ginger
1/2 tsp of curry
1/4 tsp of salt
2 Tbs of butter
5 Green Onions cut in 1/2 inch pieces
1 Small Roma Tomato
1 cup of salted peanuts
In a bowl mix your coconut milk, peanut butter, ginger, curry and salt and set aside
In large skillet melt your butter and then saute your chicken breasts, once mostly cooked add in your tomato and onion cook chicken the rest of the way with the tomato and onion
Once chicken is fully cooked pour in your sauce and allow to simmer
Then serve over rice garnished with the salted peanuts and enjoy! I have to say I still add a little extra salt to my own dish but definitely feel free to play around with the flavors and the seasonings. So really season the sauce to taste.

So start by buying pork ribs, I like to try and buy ones that have the least amount of visible fat.
Preheat oven to 475 degrees
In a big 9x13 pan pour in 1 cup of water then place ribs in pan, season with lemon pepper, garlic powder, onion powder cover with aluminum foil then bake in oven for one hour
After spread bbq sauce(I like to use sweet baby rays bbq) all over the ribs in a very generous layer then recover with foil and back for another 30 min Then WALLA your fall off the bone ribs are ready! So yummy. Try it you wont be disappointed.

Stuffed Pasta Shells
Here is my recipe for Stuffed Pasta Shells. So easy and so yummy. You can do so much with this: Add spinach, onions, do ground beef instead of chicken. Again the options are limitless I'm just doing the very basic easy beginner form:
What you need:
Pasta Shells
One large Jar of spaghetti sauce
Mexican Shredded Cheese
Italian style bread crumbs
Melted butter
garlic powder
Italian seasoning
Preheat oven to 400 degrees. And in a large skillet cook your chicken and cut it up into nice size chunks seasoned with Italian seasoning and garlic powder:
Then ENJOY!!!!

Then stuff your cooked shells and top with rest of the spaghetti sauce. Cover with aluminum foil and bake in oven for 30 min.Curry and Ginger Hummus

Directions:(after allowing beans to soak in water overnight)
- Rinse the garbanzo beans and and place in a pot. Fill with enough water to cover by at least 1 inch. Bring to a boil and then simmer over medium heat until the beans are very soft, 1 1/2 to 2 hours.
- Drain the beans and place in bowl filled of water(can save the boiled water) and chill in fridge overnight reserving the water to use later
- Transfer the beans to a blender or if you have a hand blender, a large bowl. If you guys are gonna use a bowl to blend it just know it will be more chunky, but still taste delicious. Blend the beans until smooth, adding some of the reserved water to help it blend.
- Add the tahini and blend in along with the lemon juice.
- Blend in the garlic and cumin
- Then pour your hummus into a bowl and mix in your ginger, curry and salt
- Spread the hummus into a flat serving dish and garnish and a drizzle of olive oil.and enjoy

Stuffed chicken breasts
This is one of my husband's favorites!! And I have to say it seems like a difficult meal but really is so easy. I will even show you a little cheat to put dinner on the table even sooner.
You'll need:
4 Thin sliced chicken breasts
Italian style bread crumbs
one roma tomato
fresh mozzarella cheese
butter
lemon juice
milk
garlic powder
onion power
Oven set to 400 degrees
So I will start by saying you can use stove top stuffing thats already cooked..take a cup of that then dice up a tomato and some mozzarella cheeses and mix it into the cup of stuffing. But below I will post my recipe on how to make your own stuffing. But here is the stove top version:
I have to admit to eyeballing it when I make it so the measures are guesstimates... just play around with the flavors and add more of something if you want more or take something away.
For the stuffing:(guestamating the measurements)
Take one cup of bread crumbs and mix in with it a dash of onion and garlic powder, about aTbs of lemon juice 1/2 cup of milk around a 1/4 cup of melted butter. Dice up your Roma tomato and dice up a few slices of fresh mozzarella and mix thi"s into your bread crumb mixture and Walla there is your stuffing.
Take your chicken breasts and lightly brown each side

Then top with other breast followed by a thin slice of mozzarella cheese:
Cover
with aluminum foil and bake for 20minutes then uncover and bake for an additional 10 min(note thicker chicken breasts may take longer)
