Curry and Ginger Hummus

    •  

    Directions:(after allowing beans to soak in water overnight)

  • Rinse the garbanzo beans and and place in a pot. Fill with enough water to cover by at least 1 inch.  Bring to a boil and then simmer over medium heat until the beans are very soft, 1 1/2 to 2 hours.
  • Drain the beans and place in bowl filled of water(can save the boiled water) and chill in fridge overnight reserving the water to use later
  •  Transfer the beans to a blender or if you have a hand blender, a large bowl.  If you guys are gonna use a bowl to blend it just know it will be more chunky, but still taste delicious.  Blend the beans until smooth, adding some of the reserved water to help it blend. 
  • Add the tahini and blend in along with the lemon juice.
  •  Blend in the garlic and cumin 
  • Then pour your hummus into a bowl and mix in your ginger, curry and salt
    • Spread the hummus into a flat serving dish and garnish  and a drizzle of olive oil.and enjoy
