So I apologize again, I lost the pictures for this as well so I was able to take a picture of the left overs in the fridge, doesn't look at nice as fresh made but still really tastes just as good :-)
What you need:
2 pounds of lean ground beef or ground turkey
2 packets of taco seasoning
1 large can of enchilada sauce(I like mild)
1 Tomato diced
1/4 of a large onion diced
1 16oz bag of shredded mexican cheese
1 cup of water
1 8 count pack of flour burrito size tortillas
1 Can of re-fried beans
In large skillet brown ground turkey or beef then add in your taco seasoning with 1 cup of water. Next add in your tomato and onion and allow to simmer for a few minutes. Get a large deep baking pan and pour a tiny bit of enchilada sauce into the bottom and then spread some ground beef mixture into the bottom. Top this with cheese then spread your tortillas to cover the meat and top this with re-fried beans(it may be easier to spread the beans onto the tortillas first before you place into the pan then repeat until the pan is full, then take the rest of your enchilada sauce and pour over entire dish top with cheese. You will cover this with foil but you may want to take a few tooth picks or something to keep the cheese from melting to aluminum foil then bake in the oven at 350 for 30 min.
